Beet and Ginger Relish

Beets get their bright red color from the powerful antioxidant betalain.

 

Makes 1 1/2 cups. Recipe is by Cynthia Nobles.

 

1 cup peeled and grated raw beetroot

1/2 cup peeled and grated raw carrot

1 tbl. peeled and grated raw, fresh ginger

2 tbls. white balsamic vinegar

 

Combine all ingredients and chill.
